Making Ghee in the Traditional Way

Making Ghee

If you want to make the best ghee, you need to either make it yourself or follow the traditional way of cooking it. The word ‘Ghee’ comes from the Sanskrit word ‘ghrita’, which means ‘sprinkled’. In Hindu culture, ghee is seen as very pure and holy, and you can find references to it in the Vedas and the scriptures. It’s a symbol of good luck, wealth, and abundance.

For health and flavour, it is generally recommended to look for ghee that meets the following criteria in India:

  • Ghee is made from the milk of Desi cows with access to open pastures.
  • Ghee from grass-fed cows enhances its quality.
  • Choose ghee made from free-roaming cows for better well-being.
  • Opt for ghee produced using traditional methods, avoiding industrial processes.

According to the Vedas, Purnima (full moon day) is the ideal day to make ghee as it is believed that the cosmic position of the moon on that day invigorates the quality and preparation of the milk.

The Vedas believe that the quality, colour and taste of desi ghee are determined by the type of cow, quality of food intake and, of course, the freshness of milk.

The Vedas have formulated a method for producing desi ghee, known as the Bilona Method, from cow milk.

The Bilona Method of Making Ghee

The Bilona Method

The process of making ghee in the Bilona method involves the production of ghee from cultured butter which is separated from churned curd. There are 5 stages in the process of manufacturing ghee.

Removing the Cream:

The desi cows’ fresh milk is boiled on low heat until it forms a thick cream on the surface of the pan. The milk then cools. The cream on the surface is removed.

Forming the Curd:

The milk is mixed with a small amount of stored curd, or lemon juice, and left to set overnight. In the past, the milk must be transferred into a deep clay pot before the curd can be set. The churning process commences the next day.

Making Butter:

The churning of the curd is carried out by a wooden churn using both a clockwise and an anti-clockwise motion. It takes a long time and is known as bilona. Finally, the butter (called Makhan) is separated from the curd, leaving behind a liquid called buttermilk.

Making the Ghee:

Next, the butter is cooked on medium heat. When the butter boils, reduce the heat. After a long time, all water is evaporated. The butter begins to turn clear. The milk solids are deposited at the bottom of the butter. You can smell the ghee once it is cooked. The duration of this step affects the aroma and taste of ghee.

Separating the Ghee:

The milk solids are then strained out of the ghee before it’s put in a container.

The process of producing ghee is straightforward. Butter is heated to a specified temperature, resulting in the removal of water, milk, and other impurities, resulting in the formation of a residue known as Ghee. Ghee is free from any form of lactose or casein, with a boiling point of approximately 490°, making it suitable for both frying and cooking.

Why Is Ghee Available Today in Shops and Malls Bad for Body?

Why Is Ghee

The process of making ghee is so hot that it destroys most of the nutrients in it. Machine-made ghee doesn’t have enough vitamins and minerals. Plus, the ghee you buy from stores is usually tainted with preservatives and artificial scents to make it last longer and taste better.

Not to mention, many commercial brands make ghee with saturated fat, which can increase your risk of heart disease. So, if you’re wondering if your store-bought ghee is clean, here’s how to test it.

To ensure the purity of ghee, consider the following steps:

  1. Look for a declaration of being a natural product, free from preservatives, synthetic additives, and artificial colours or flavours.
  2. Verify if the ghee is made from 100% certified grass-fed cows’ milk.
  3. Read the list of ingredients carefully to avoid ghee that may contain vegetable oil or coconut oil, which can indicate adulteration.
  4. Keep in mind that pure desi cow ghee is generally more expensive, costing over a thousand and a half bucks in Indian rupees.

Thanks to tech, brands make sure their products are so clean that it’s almost impossible to tell how pure they are. If you’re looking to double-check the purity of the ghee you already bought, here are some helpful tips and tricks.

  • Heating Method: Put a spoonful of ghee in a hot pan. If it immediately melts and turns brownish, it is pure. The yellowish colour indicates adulteration.
  • Sugar Method: Melt ghee with sugar in a bottle, shake, and let it sit. Red sediments at the bottom indicate impurities and vegetable oil.
  • Flavour Check Method: Pure cow ghee has a nutty flavour and a yellowish-golden colour.
  • Iodine Method: Add iodine to melted ghee. The purple colour indicates the presence of starch and impurities.
  • Double Boiler Method: Heat ghee in a glass bowl using a double boiler. If it separates into two layers upon refrigeration, it contains other oils like coconut oil.

Preparing the Best Ghee in India at Home – Possible?

Preparing the Best Ghee

Typically, it takes 25-30 l of milk to make 1 litre ghee using the bilona method. The ghee can be kept at room temperature. It does not need to be refrigerated.

In order to make ghee at home with the help of the Bilona method, the first thing you need is pure cow’s milk. Then, you need a deep-bottomed, earthen pot. Finally, you need a hand blender, even a food processor.

This process is time-consuming and labour-intensive, making it difficult for working professionals to prepare ghee at home. However, it is an enjoyable experience.

Today, many small enterprises still follow this traditional way of preparing ghee and sell their products online, so that you can get it at your doorstep in just a few clicks.

4 Tips to Store Ghee for Extended Shelf Life

Store in an airtight container: To extend the shelf life of ghee, ensure it is stored in an airtight container away from direct sunlight or excessive heat. Room temperature storage is ideal, but refrigeration can also help maintain its quality.

Use a clean spoon: Prevent contamination by using a clean, unused spoon when taking out ghee for usage. Dust or dirt can spoil the ghee, so avoid using dirty utensils or directly pouring from the container.

Use separate containers: If you frequently use ghee, it’s advisable to use two separate containers – a small one for daily use and a larger one for storage. This minimizes moisture exposure during frequent opening and closing, preserving the quality of the remaining ghee.

Choose the right container material: The container material also matters in extending the shelf life of ghee. Steel containers are suitable for daily use, plastic containers are good for deep freezing, and glass containers are ideal for preserving larger quantities of ghee.
